Nonie's didn't relocate to Boracay so much as grow into it. The original restaurant is still running, along with everything that came after it. Ondus Hotel, which opened in September 2024, is an addition, not a replacement.
When Ondus first came up, the real question wasn't whether to do it. It was whether we could do it without losing what made the original restaurant work. Getting to yes took months: planning, menu testing, and a lot of direct conversation with the Ondus team about what an actual partnership would require.
What partnership means in practice
Nonie's runs the entire culinary programme at Ondus Hotel: the 6:00 AM breakfast buffet, à la carte through the afternoon and evening, poolside service, private events. This isn't a licensing deal — it's our own kitchen, cooking for the hotel end to end.
That meant hiring a team on the island from nothing, setting up supply lines with local farmers and producers, and reworking a menu built for a different setting to work in a beachfront hotel. Some of it translated straight across. Some needed a full rethink. The whole process ran longer than planned and came out better than expected.
The beachfront moment
The first morning service at Ondus was a 6:00 AM start on a Tuesday in September — forty-seven covers for breakfast, the sun coming up over the water as the first bread came out of the oven. Everyone on shift that day still brings it up.
