Ask anyone who's had breakfast at Nonie's and they'll bring up the same thing unprompted: how is this so good for a hotel buffet? Fair question. Here's the actual answer.

It comes down to time. The buffet doesn't start at 6:00 AM because someone flips a switch at 5:59. Prep starts the night before: the bread dough gets shaped and set to prove, the kombucha gets checked, the egg station gets laid out by hand while most guests are still asleep. None of that is for show. It's just what the kitchen does every night, whether or not anyone's watching.

What's on the table

The buffet changes with the season and with what's available from our local suppliers, but some things are always there. The pandan pancakes (golden, slightly fragrant, served with local honey) are ordered by nearly everyone who sits down. The kare-kare, when it appears, arrives after three days of slow cooking. You can taste it.

The spread actually works for different diets, not just in theory: a full vegan section, gluten-free clearly marked, eggs cooked to order at the station. The kombucha is brewed in-house and on tap, which still catches guests off guard — most expect a juice dispenser, not a tap.

The room

Nonie's sits inside Ondus Hotel at Station 3, which means breakfast comes with a beachfront view and a stretch of Boracay that's stayed quiet while the rest of the island filled in. The al fresco terrace is the best seat in the house. When the wind picks up, take the covered section instead.

Walk-ins are welcome for breakfast. Hotel guests have it included with their stay. Either way, it runs 6:00 AM to 10:00 AM daily.
