People ask us constantly: what should I order? Usually while standing at the host stand, menu already open, and we've got about twenty seconds to answer. This is the long version of that answer, for anyone who'd rather know before they sit down.
Start here: The Kare-Kare
If you order one thing here, make it the kare-kare. It's a three-day process — slow-simmered peanut sauce, oxtail and vegetables cooked until they barely hold their shape — served with bagoong on the side. If you've never had kare-kare, this is a fair place to start. If you have, you already know.
The Sticky Ribs
Sweet, lacquered, falling off the bone. The sticky ribs are the dish that makes people take a photo before they eat it, then finish the plate before they remember to post it. Served with a small side of pickled vegetables that cuts the sweetness.
Breakfast: the pandan pancakes
Part of the breakfast buffet, and the thing most guests mention when they come back. Pandan-infused batter, cooked until golden, served with local honey and a small pat of butter. Lighter than they look, and gone faster than you expect.
The kombucha
Brewed in-house and on tap. Flavours rotate, so ask what's on today. The house blend leans floral and slightly dry. If you're used to the sweet commercial stuff, expect a surprise.
